A number of our CSA subscribers choose Cheese Baskets to redeem their cheese. At first we didn’t think that required much explanation but we’ve had a few questions.
Baskets will be delivered to your door twice a year. We haven’t yet figured out those dates but it’ll be roughly at the beginning of the summer and toward the end of the year.
We’ll fill the baskets with a nice variety of cheeses available at the time. I say “at the time” because we’ll have less inventory for the first basket this year then we will later on, especially as the dairy grows.
Remember, we’re planning on working in five milk streams: cow, goat, sheep, water buffalo and mare’s milk. Some of our cheeses are fresh – like ricotta, Nika, and water buffalo mozzarella – and others – like Toscano and cheddar – are aged for six months and more.
We’ll notify everyone beforehand the cheese is coming. The boxes will be packed as close to shipping time as possible, with an ice pack in the box, and shipped by overnight courier. We know you’ll spend the day awaiting your cheese, wine and crackers at the ready. At least that’s how I like to picture you.
